Fermented with their in-house mixed culture, developed over time through blending, experimentation, and reuse. It contains a combination of saison yeast, brettanomyces, and a range of wild and commercial yeasts and bacteria
This beer is the first of two BDS Sour Cherry releases. Montmorency was originally cultivated in the Montmorency Valley, near Paris. Typically used for cooking on account of it being really quite tart in a 'oh good god no, that's too much' kind of a way. In food and drink however, it lends a beautiful sour edge. Pies, jams, and not at all coincidentally, beer.
High in antioxidants, they can contribute to lowering inflammation in the body. That does not mean this is a health drink. But it is nice.
