The Story

100% Malbec, organically grown in Cahors, Southern France

Traditional short-term vinification (maceration for around fifteen days) in stainless steel and cement vats. Aging lasts 1 winter on fine lees and is done in vats only. Quick bottling to maintain freshness. Contains Sulphites.

Combel-la-Serre is a family property of 23 hectares located 17 km from Cahors on the Causse Limcaire, that was created under the leadership of Jean-Pierre ILBERT who decided to leave the cooperative cellar in 1998 to become independent. His son, Julien, returned to the property in 2003 and today works with Sophie, his wife. Little by little, the couple gave a second wind to the estate: conversion to Organic Agriculture (via Ecocert), return to numerous seasonal manual works and reflection on the different terroirs, always with respect for the plants.
