This complex white is a blend of Semillon, Sauvignon Blanc, and Chenin Blanc, fermented in nine-year-old oak barrels to build depth without overpowering the fruit with woody flavours. It is then aged for nine months in sandstone amphorae, a process that allows the wine to breathe and develop a beautiful mineral tension and silky mouthfeel. The result is a wine that balances zesty citrus notes with a rounded, stony character and a long, clean finish.
The estate is managed by Florent Girou, a winemaker who returned to his family roots in Bergerac after years of crafting wine across the globe. Located on the hillsides of Monbazillac and Bergerac, the domaine is dedicated to polyculture, integrating sheep and diverse flora to create a self-sustaining ecosystem. Florent’s approach is one of "slow winemaking," where patience in the cellar and a deep respect for geology result in wines that are incredibly pure, energetic, and reflective of the limestone-rich terroir.
